Making a batch of this super easy and healthy mayo is part of my weekly meal prep game. Throughout the week I use it for things like chicken or tuna salad, Ceasar dressing or lemon garlic aioli.
Immersion Blender Mayo
- 1 Egg
- 1 tbsp lemon juice or vinegar
- 1/4 tsp salt
- 1 tsp dijon mustard
- 1 cup extra light tasting olive oil or avocado oil
- Add all ingredients into a glass jar in the order of the ingredient list. (Oil goes in last).
- Allow all ingredients to settle for a bit.
- Place immersion blender in the jar touching the bottom.
- Blend 20-30 seconds.
Date your jar, and make a new batch each week during meal prep!
