The love I have for simple, healthy food stems from my Scandinavian childhood. Growing up my grandmother knew the best chanterelle spots, and my mom would supplement veggies, fruit, and herbs grown in our garden with foraged foods like nettle and dandelion greens. I credit my hippie mom with igniting my curiosity towards using nature and food as medicine. Ear infection? My mom would wrap an onion in a cheesecloth around my ear. Cold? Horseradish & Echinacea to the rescue!
Fast forward to my 30s and life in corporate America. My demanding career lead to coffee-fueled mornings, infrequent meals eaten at my desk, and many late nights spent in front of the computer with a glass of wine. Combined with raising a child with special needs and losing my first husband to lung cancer, my body finally said no more! I had completely worn out my stress response system and my thyroid took the worst hit. I knew that something had to change when I was so cold I needed thick socks, sweats, and two blankets to keep warm at night – in Hawaii! My healing journey was not linear, and many pieces had to fall in place before I felt like myself again. The key components for me were (and still are) ancestral way of eating, working on foundations and root causes such as gut health, and mind-body connection through meditation and mindfulness. Today, I am energetic, happy and feel so much better than I did a decade ago!
